Y’all….. I die for these salsa verde honey lime chicken bowls. Not only are they so good, but they’re so easy! They’re perfect for a quick summer lunch or an easy family dinner. I’ll show you a step by step of how I build the bowls and a tip for an even easier way to make this chicken! Also you can use this chicken in a taco shell for kids who may not be into the buddha bowl. Ok on to the chicken recipe!
Ingredients:
-4 chicken breasts
-1 1/2 cups salsa verde (Trader Joe’s has my favorite kind)
-1/2 cup honey
-the juice of 3 large limes
-1/2 teaspoon chili powder, onion powder, garlic powder, smoked paprika, cumin, salt, pepper
Instructions:
-Mix all ingredients in a crock pot
-Cook on low for 7 hours
-Shred chicken
-Cook for 30-45 more minutes after shredded
-Serve in a bowl, taco, or a quesadilla
Next, I make the rice(you could even do instant rice or remade rice from the frozen section in trader joes), heat up the beans(I just used canned black beans), and throw together the homemade pico for the bowls. These are the best bowls ever; I literally use them for everything.
Everyone does their pico de gallo a little different, but for me I keep it super simple. I just chop up an onion, tomato, and some cilantro; throw it all in a bowl, and season it with salt, pepper, lime juice and garlic powder. It’s very much a tase thing which I know y’all rule followers hate to hear haha.
A trick I have for those who want to make this recipe quick, is to grab a can of salsa verde and a rotisserie chicken and drizzle the salsa verde over the top, stick the chicken in the oven to heat it up and serve it any way you and your family like!
Another great way to eat this leftover chicken would be in a taco or a quesadilla served with the same fixings! It’s good for a few days.
